Does it matter what is the orientation of the HAT (horizontal/vertical/other) in terms of compass and gyro readings?

In OpenPlotter it does not matter. Calibrate accelerometers first, fix the HAT to the boat, press “boat is level” and go to sail to auto-calibrate compass. You have also a heading offset to make match the real north with your HAT readings.
